Instructions
 

Preparation

  • Wash and chop all the vegetables, preparing them for cooking.

Cooking

  • Heat olive oil in a large skillet over medium-high heat until shimmering.
  • Add chicken breast to the skillet, seasoned with salt and pepper. Sauté for 5-7 minutes until golden brown and cooked through.
  • Toss in sliced onion and minced garlic, sauté for another 2-3 minutes until softened.
  • Add bell peppers, zucchini, and carrots. Stir-fry for about 5 minutes until tender-crisp.
  • Sprinkle dried oregano and drizzle lemon juice over the skillet, mixing well and cooking for another minute.
  • Adjust seasoning as needed and serve hot directly from the skillet.

Notes

For variations, you can use tofu or chickpeas instead of chicken for a vegetarian option. Add grains like quinoa or rice for a heartier meal.
