  • 1 pound lean ground beef Can substitute with ground turkey or lentils.
  • 1 can (10 oz) green chili enchilada sauce Look for low-sodium options.
  • 1 cup black beans Rinse canned beans before use.
  • 1 cup shredded cheese (cheddar or Monterey Jack) Melts beautifully.
  • 8 small corn tortillas Whole grain tortillas are a nutritious alternative.
  • 1 cup diced bell peppers and onions Use any vegetables you prefer.
  • 1 tsp cumin Essential for flavor.
  • 1 tsp chili powder Essential for flavor.
  • to taste fresh cilantro For garnish.
  • to taste sour cream For garnish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the beef in a large skillet over medium heat until browned. Add the diced bell peppers and onions, and cook until tender.
  • Stir in the cumin, chili powder, black beans, and half of the green chili enchilada sauce. Allow to simmer for about 5 minutes.
  • Warm the corn tortillas in a separate pan for about 30 seconds on each side until pliable.
  • Spoon the beef mixture into each tortilla, roll them up, and place seam-side down in a greased baking dish.
  • Pour the remaining green chili sauce over the top and sprinkle with cheese. Bake for about 20 minutes, until cheese is bubbly and golden.
  • Let the enchiladas rest for a few minutes before garnishing with fresh cilantro and a dollop of sour cream.

Notes

For a spicy kick, add jalapeños or hot sauce to the beef mixture. To make it dairy-free, use a plant-based cheese.
