  • 2 tablespoons olive oil can substitute with avocado oil for a healthier option
  • 3 cloves garlic, minced fresh garlic for robust flavor
  • 1 tablespoon fresh rosemary, chopped or 1 teaspoon dried rosemary
  • 1 tablespoon fresh thyme, chopped or 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped or use basil for a different twist
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lemon, juiced adds a fresh zest

Chicken

  • 4 pieces boneless, skinless chicken breasts (about 6 oz each)

Preparation

  • In a mixing bowl, whisk together olive oil, garlic, rosemary, thyme, parsley, salt, pepper, and lemon juice.
  • Place the chicken breasts in a resealable plastic bag or a glass dish and pour the marinade over them, ensuring the chicken is well coated.
  • Refrigerate for at least 30 minutes; for maximum flavor, aim for 2 hours.

Cooking

  • Preheat your oven to 375°F (190°C).
  • Place the marinated chicken on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

Serving

  • After baking, remove the chicken from the oven and cover it loosely with foil for about 5 minutes.
  • Serve with your favorite side vegetables or grains.

Notes

Leftover chicken can be stored in an airtight container in the fridge for up to 4 days. For longer storage, freeze properly in a freezer-safe bag for up to 3 months.
