  • 2 stalks Green Onions, sliced For garnish
  • 1/4 cup Burger Sauce Mix of mayo, mustard, ketchup, and spices. Greek yogurt can be a healthier alternative.

Seasonings

  • to taste Dried Herbs Optional, to enhance flavors.

Preparation

  • Prepare the Cauliflower Rice: If using frozen cauliflower rice, microwave according to package instructions. If using fresh, chop into florets and pulse in a food processor until rice-like.
  • Cook the Beef: In a large skillet over medium heat, add ground beef. Cook until browned, breaking it apart with a spoon.
  • Season the Meat: When the beef is nearly cooked through, sprinkle in salt, pepper, and dried herbs to taste. Stir well.
  • Add Cauliflower Rice: Fold in the cauliflower rice to the skillet and cook for an additional 5 minutes.
  • Make the Burger Sauce: In a small bowl, mix mayo, mustard, ketchup, and spices. Adjust seasoning to taste.

Assembly

  • Scoop the beef and cauliflower mixture into bowls.
  • Add shredded cheddar cheese on top, drizzle with burger sauce, and garnish with sliced green onions.

Notes

Experiment with different veggies like spinach or bell peppers. For a spicier kick, add jalapeƱos to the beef. This dish stores well in airtight containers in the fridge for up to 4 days.
