  • 1 small Onion Diced.
  • 2 cloves Garlic Minced.
  • 14.5 oz Diced Tomatoes Fire-roasted diced tomatoes enhance flavor.
  • 1 can Black Beans Rinsed; substitute with pinto beans if preferred.
  • 1 cup Corn Can be fresh, frozen, or canned.
  • 8 oz Cream Cheese Can substitute Greek yogurt for a lighter option.
  • 2 tbsp Taco Seasoning Use store-bought or homemade.
  • 4 cups Chicken Broth or Vegetable Broth Bone broth can also be used for extra nutrients.

Preparation

  • In a large pot, heat a splash of olive oil over medium heat. Add diced onion and minced garlic and sauté until softened, about 3-4 minutes.
  • Add the ground turkey or beef, cooking and breaking it up with a spoon until browned and no longer pink, about 5-7 minutes.
  • Pour in the diced tomatoes (with juices) and rinsed black beans. Stir everything together, allowing the flavors to mingle.
  • Add the corn and taco seasoning, mixing well to coat everything evenly.
  • Pour in your chicken or vegetable broth. Bring the mixture to a gentle simmer and let it bubble for 10 minutes.
  • Lower the heat and stir in the cream cheese until melted and well incorporated.
  • Taste and adjust seasoning if needed, finishing with fresh cilantro if desired.

Notes

For added spice, include diced jalapeños or hot sauce. Consider offering toppings like avocado, shredded cheese, or crushed tortilla chips.
