  • 1 can Cream of Mushroom Soup Can use a healthy option or homemade.
  • 2 cups Cheddar Cheese Sharp or mild, for topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef until fully cooked.
  • Add diced onion and bell peppers to the skillet and sauté until tender, about 5 minutes.
  • In a large baking dish, layer half of the sliced potatoes and sprinkle with salt, pepper, and a sprinkle of cheese.
  • Add the ground beef mixture on top of the layer of potatoes, followed by another layer of potatoes.
  • Pour the cream of mushroom soup over the final layer of potatoes, spreading it evenly.
  • Finish with a generous layer of cheese on top.

Baking

  • Cover with aluminum foil and bake in the preheated oven for 30 minutes.
  • Uncover and bake for an additional 15 minutes until golden and bubbly.

Notes

For a leaner option, substitute ground turkey or chicken. For vegetarian, replace meat with beans or lentils. To add heat, use jalapeños or hot sauce. Fresh herbs like thyme or rosemary can enhance the flavor.
