Ingredients
  

Pizza Dough

  • 1 large Pizza dough (store-bought or homemade) Feel free to use your favorite recipe or grab a pre-made crust for convenience.

Vegetables

  • 1 tbsp Olive oil A drizzle adds depth and brings out the flavors in the veggies.
  • 1 cup Bell peppers (any color) These add sweetness; red, yellow, or orange will work beautifully.
  • 1 cup Zucchini Sliced into coins or half-moons for textural contrast.
  • 1 small Red onion Thinly sliced for a sweet, mellow bite when roasted.
  • 1 cup Mushrooms Sliced portobellos or button mushrooms for earthy flavor.
  • 1 cup Cherry tomatoes Provides a burst of sweetness.
  • 2 cloves Fresh garlic Minced for depth; roasted garlic can be used for a sweeter flavor.

Toppings

  • 1 cup Mozzarella cheese Opt for fresh or shredded; it melts perfectly.
  • 1 few Fresh basil Adds a fragrant finish.
  • to taste Salt and pepper Just a pinch to enhance all the flavors.

Instructions
 

Preparation

  • Preheat your oven to 475°F (245°C) to ensure a crispy crust.
  • Chop your bell peppers, zucchini, red onion, and mushrooms into bite-sized pieces and toss them in a bowl with olive oil, minced garlic, salt, and pepper.

Roasting

  • Spread the veggies evenly on a baking sheet and roast for about 15 minutes, or until they’re tender and slightly caramelized.

Pizza Assembly

  • While the veggies are roasting, roll out your pizza dough on a lightly floured surface to your desired thickness.
  • Transfer the rolled-out dough to a baking sheet or pizza stone.
  • Remove the roasted vegetables from the oven and top your pizza dough with marinara sauce, followed by the roasted veggies, then finish with mozzarella cheese.

Baking

  • Bake in the oven for another 10-12 minutes or until the cheese is bubbly and slightly golden.
  • Once out of the oven, let the pizza cool for a minute, then sprinkle with fresh basil. Slice and serve hot.

Notes

You can swap for whole-grain or gluten-free crusts and customize toppings based on seasonal vegetables. For an indulgent touch, drizzle balsamic reduction before serving.
