  • ½ cup Greek Yogurt Used for making whipped feta.
  • 1 tablespoon Lemon Juice Adds brightness to the whipped feta.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel the carrots if desired and slice them into uniform pieces—about 1 to 2 inches in length.

Mixing the Glaze

  • In a large bowl, whisk together the honey, harissa paste, olive oil, salt, and pepper.
  • Once combined, the glaze should look thick and luscious.

Coating and Roasting

  • Add the carrots to the bowl and toss until well-coated with the honey-harissa mixture.
  • Spread the glazed carrots on a baking sheet in a single layer.
  • Roast in the preheated oven for 20 minutes, turning halfway through.

Whipping the Feta

  • While the carrots are roasting, combine the feta cheese, Greek yogurt, lemon juice, salt, and pepper in a food processor.
  • Blend until creamy and smooth, about 1 minute.

Serving

  • Once the carrots are perfectly roasted, mound them on a serving plate.
  • Spoon the whipped feta generously on top or serve it on the side.
