For the Mango Salsa

  • 1 large Fresh mango Diced for sweetness

Instructions
 

Marination

  • In a bowl, combine honey, lime juice, minced garlic, salt, and pepper.
  • Add the chicken breasts and let them soak up the flavors for at least 15 minutes.

Prepare Salsa

  • While the chicken marinates, mix diced mango, red onion, cilantro, lime juice, and season with salt.
  • Set aside to let the flavors meld.

Cooking

  • Grill or pan-sear the chicken for about 6-7 minutes per side or until fully cooked and golden brown.
  • Let the chicken rest for a couple of minutes before slicing.

Serving

  • Serve topped with the mango salsa.

Notes

You can amp up the heat by adding diced jalapeƱos to your mango salsa. For a festive meal, consider serving with a fruit salad. Experiment with different fruits in the salsa.
