  • Season the chicken breasts with salt and pepper on both sides.

Cooking

  • In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts and sear them for about 5-7 minutes on each side until golden brown.
  • In a small bowl, mix together honey and Dijon mustard until well combined. Once the chicken is browned, pour this mixture over the chicken in the skillet.
  • Sprinkle the minced garlic into the skillet and stir to combine. Cook for another minute.
  • Pour in the chicken broth and then add the rice. Bring to a gentle simmer.
  • Lower the heat, cover the skillet, and let everything simmer for about 20 minutes, or until the rice is tender and the chicken is cooked through.
  • Remove the skillet from heat and let it sit for a few minutes to meld the flavors. Garnish with fresh parsley if desired.

Notes

For lighter options, substitute Greek yogurt for the mustard for a creamy, tangy twist. Add vegetables like frozen peas or sliced bell peppers during the last 5 minutes of cooking for a brighter dish.
