  • 1/4 cup Hot Honey Can substitute with sriracha or chili flakes mixed with honey.
  • 2 cups Rice, cooked Brown or white rice works well. Quinoa is a gluten-free alternative.
  • 1 cup Bell Peppers, chopped Any variety you love.
  • 1 medium Onion, diced For aromatic flavor.
  • 2 tablespoons Olive Oil Avocado oil can be used as an alternative.
  • 3 cloves Garlic, minced Adds depth to the dish.
  • to taste Salt and Pepper Essential for seasoning.

Preparation

  • Cook your rice according to package instructions while preparing the other ingredients.
  • In a large skillet over medium heat, drizzle olive oil and sauté diced onions and chopped bell peppers for about 5 minutes until softened.
  • Season the chicken breasts with salt and pepper, and place them in the skillet with the vegetables. Cook for 6-7 minutes on each side until golden brown.
  • Add the minced garlic to the skillet when the chicken is nearly done, stirring for about 30 seconds until fragrant.
  • Drizzle hot honey over the chicken, allowing it to caramelize for an additional minute.
  • Fluff the cooked rice and divide it into serving bowls, topping with sautéed vegetables and sliced hot honey chicken. Drizzle extra hot honey on top if desired.
  • Optionally, sprinkle fresh herbs like cilantro or parsley for garnish.

Notes

Spice it up with sliced jalapeños or cayenne pepper, and enjoy different sauces for variety. This meal stores well for meal prep.
