Ingredients
  

Main Ingredients

  • 2 to 4 pieces boneless skinless chicken breasts
  • 1 to 2 tablespoons olive oil or melted butter

Seasoning Mix

  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked if available)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • a pinch dried thyme or Italian seasoning (optional)

Optional Toppings

  • to taste lemon wedges
  • to taste honey
  • to taste grated cheese

Instructions
 

Preparation

  • Heat your oven to 425°F (220°C).
  • Pat the chicken dry with paper towels.
  • Rub the chicken with olive oil or butter on both sides.
  • Sprinkle the seasoning mix generously on both sides of the chicken.
  • Place the chicken in a baking dish with some space between each piece.

Cooking

  • Bake until the thickest part of the chicken reaches 165°F (75°C).
  • Remove from the oven and let rest for 5 to 10 minutes before slicing.

  • After resting, serve with your desired optional toppings.

Notes

For a crispy finish, consider broiling the chicken for a minute or two at the end, but watch it closely.
