  • 4 cups Kale, chopped Fresh curly kale is recommended.
  • 2 cups Pasta (penne or rotini) Any short pasta will do.
  • 1/2 cup Caesar Dressing Homemade or store-bought.
  • 1/2 cup Parmesan Cheese, grated Use nutritional yeast for a dairy-free option.
  • 1 cup Cherry Tomatoes, halved Adds freshness and color.
  • 1 cup Croutons Store-bought or homemade.
  • 1 tablespoon Lemon Juice Freshly squeezed for best flavor.

Instructions

Preparation

  • Begin by boiling a pot of salted water. Cook your pasta according to package directions until al dente, then drain and rinse under cold water to stop the cooking process.
  • While the pasta cooks, wash and chop the kale into bite-sized pieces. If you're using curly kale, massage it gently for a softer texture.
  • In a large mixing bowl, toss the cooled pasta with the chopped kale.
  • Add your Caesar dressing and toss until everything is evenly coated.
  • Sprinkle the Parmesan cheese, chopped cherry tomatoes, and croutons on top. Give it a gentle toss to mix.
  • Finish with a squeeze of fresh lemon juice to brighten the flavors.
  • Serve and enjoy this vibrant salad!

Notes

You can customize the salad with add-ins like grilled chicken, shrimp, or chickpeas. For a gluten-free option, use chickpea pasta.
