Preparation

  • Marinate the Chicken: In a medium bowl, whisk together olive oil, lime juice, honey, minced garlic, cumin, paprika, salt, and pepper. Add the chicken breasts, ensuring they’re coated in this delightful marinade. Cover and let it rest in the fridge for at least 15 minutes—or even overnight for more flavor.
  • Preheat the Grill: Heat your grill to medium-high. If you’re using a grill pan indoors, remember to preheat it and lightly grease for the best results!

Cooking

  • Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Grill each side for about 7-8 minutes, or until cooked through and juices run clear. Your kitchen will smell amazing at this point!
  • Rest the Chicken: Once fully cooked, remove the chicken from the grill and let it rest for 5 minutes. This helps seal in those delicious juices.
