Ingredients
  

Meat

  • 1 lb Ground beef or turkey Feel free to use plant-based crumbles for a vegetarian option.

Aromatics

  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced

Base

  • 28 oz Canned crushed tomatoes
  • 4 cups Chicken or vegetable broth
  • 8 oz Lasagna noodles, broken into pieces

Seasoning

  • 1 tbsp Italian seasoning

Toppings

  • 1 cup Mozzarella cheese, shredded For topping the soup.
  • 1/4 cup Parmesan cheese, grated For topping the soup.
  • Fresh basil or parsley, for garnish Optional.

Instructions
 

Preparation

  • In a large pot over medium heat, brown the ground meat until fully cooked. Drain any excess fat and set aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  • Pour in the crushed tomatoes and broth, stirring to combine. Bring to a simmer.
  • Sprinkle in the Italian seasoning and add the cooked meat back to the mixture. Taste and adjust seasoning as desired.
  • Stir in the broken lasagna noodles, allowing them to cook in the soup for about 10 minutes or until al dente.
  • Once the noodles are cooked, ladle the soup into bowls and top generously with mozzarella and a sprinkle of Parmesan.

Notes

This soup can be customized by adding veggies like spinach, zucchini, or bell peppers, and can be made creamy with ricotta or cream. It’s easily doubled and great for leftovers!
