  • 4 pieces boneless, skinless chicken breasts Feel free to swap with thighs for a richer taste.
  • 3 tablespoons olive oil Avocado oil is a great substitute for a different flavor profile.
  • 4 cloves garlic, minced Fresh garlic is best; garlic powder can work in a pinch.
  • 2 pieces lemons, zest and juice
  • 1 teaspoon dried oregano Fresh oregano adds extra flavor if available.
  • to taste none Salt and pepper
  • as desired none Fresh parsley for garnish Basil is an excellent alternative, especially in summer.

Instructions
 

Preparation

  • Season chicken breasts generously with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat until shimmering.

Cooking

  • Add the chicken to the skillet, searing for 5-6 minutes on each side until golden brown.
  • Push the chicken to one side of the pan, add the minced garlic, and sauté for 1 minute until fragrant.
  • Pour in the lemon juice and zest along with the dried oregano, scraping the bottom of the pan to deglaze it.
  • Reduce heat to medium-low, return the chicken to the center, and simmer in the lemony sauce for an additional 5 minutes until cooked through (internal temperature of 165°F).
  • Garnish with freshly chopped parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat gently with a splash of water or broth to maintain moisture.
