  • 2 tablespoons honey Adds a touch of sweetness that balances the tartness.
  • 4 cloves garlic, minced Because garlic makes everything better!
  • 1 tablespoon fresh rosemary, minced Earthy and aromatic; you could swap in thyme or oregano if you prefer.
  • 1 teaspoon salt Enhances all the flavors beautifully.
  • 1/2 teaspoon black pepper A pinch of heat to round it all off.

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts Feel free to use thighs for a juicier bite!

Preparation

  • In a large bowl, whisk together the olive oil, lemon juice, honey, minced garlic, rosemary, salt, and pepper.
  • Place the chicken breasts in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to overnight.

Cooking

  • Preheat your grill to medium-high heat. If you're using a grill pan, warm it up on the stove until it’s hot and ready.
  • Remove the chicken from the marinade, letting the excess drip off. Place it on the grill and cook for about 5-6 minutes on one side, until you see lovely grill marks.
  • Flip the chicken and grill for another 5-6 minutes, or until the internal temperature reaches 165°F.
  • Once cooked, let the chicken rest for a few minutes to lock in those fantastic juices.
  • Slice it up and get ready to plate.

Notes

For extra flavor, marinate the chicken overnight. Serve alongside roasted vegetables or herby quinoa.
