Ingredients
  

For the Marinade

  • 2 lemons Zest and juice of 2 lemons For that fresh, zesty flavor.
  • 2 tablespoons Olive oil Adds richness and helps the herbs stick.
  • 3 cloves Garlic, minced For depth and warmth.
  • 1 tablespoon Fresh parsley, chopped Or swap for cilantro for a different twist.
  • 1 teaspoon Dried oregano Or fresh if you have it on hand, use double.
  • Salt and pepper to taste Essential for enhancing all the flavors.

For the Shrimp

  • 1 pound Large shrimp, peeled and deveined Look for fresh or frozen, depending on availability.

Preparation

  • In a medium bowl, combine lemon juice, lemon zest, olive oil, minced garlic, parsley, oregano, salt, and pepper. Whisk until well blended.
  • Toss the cleaned shrimp into the marinade, ensuring each piece is fully coated. Let them marinate for at least 10 minutes.
  • Heat your grill to medium-high, or preheat a stovetop grill pan over medium heat and brush it lightly with oil.

Cooking

  • Thread the shrimp onto soaked skewers. Place the skewers on the grill and cook for 2–3 minutes on each side until they turn bright pink.
  • Once cooked through and opaque, remove them from the grill and transfer to a serving platter.
  • Finish with a sprinkle of fresh herbs or an extra squeeze of lemon for brightness.

Notes

Healthier Swaps: Substitute olive oil with avocado oil for a different flavor. Seasonal Twists: Add fresh basil or dill in summer for additional flavor. For spice, add red pepper flakes in the marinade.
