  • 4 pieces Chicken Thighs (bone-in, skin-on)
  • 3 tablespoons Olive Oil Can substitute with avocado oil.
  • 2 pieces Fresh Lemons Zest and juice required, plus extra slices for garnish.
  • 4 cloves Garlic Can use fresh or pre-minced garlic.
  • 1 tablespoon Fresh Herbs (thyme, rosemary, parsley) Chopped.
  • 1 teaspoon Salt Basic seasoning.
  • 1 teaspoon Black Pepper Basic seasoning.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Pat the chicken thighs dry with paper towels.
  • In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper. Toss the chicken thighs until coated.
  • Sprinkle chopped fresh herbs over the chicken.
  • Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a cast-iron skillet. Add lemon slices around.

Cooking

  • Roast in the oven for 45 minutes or until the chicken reaches 165°F (74°C) and the skin is crispy.
  • Let the chicken rest for about 10 minutes before serving.

Notes

For flavor variations, try adding a splash of white wine or mixing in some Dijon mustard. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
