Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce the potatoes with a fork. Bake them directly on the oven rack for about 45 minutes or until tender.
  • Once the potatoes are cool, peel and cut them into chunks.

Mixing

  • In a large mixing bowl, combine sour cream, 1 cup of cheese, crumbled bacon, green onions, garlic powder, salt, and pepper. Stir until combined.
  • Gently fold in the potato chunks until they are coated.

Baking

  • Transfer the mixture into a baking dish, spreading it evenly. Top with the remaining cheese.
  • Bake for 20-25 minutes, until the cheese is bubbly and golden.

Notes
