  • Salt and pepper, to taste Essential for flavor balance—add to your liking!
  • Green onions and sour cream For garnish; use Greek yogurt if you prefer a healthier option.

Preparation

  • Peel and cube the russet potatoes into bite-sized pieces. Set aside.
  • In a large pot over medium heat, add a splash of olive oil and sauté the chopped onion until translucent, about 3-4 minutes.
  • Add minced garlic and cook for an additional minute.

Cooking

  • Stir in the cubed potatoes, then pour in the chicken or vegetable broth. Bring to a gentle boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are fork-tender.
  • Using an immersion blender, blend the soup until smooth, or leave some potato chunks for added heartiness.
  • Stir in the milk or heavy cream and half of the shredded cheddar cheese. Season with salt and pepper to taste. Let it simmer for an additional 5 minutes.
  • Ladle the soup into bowls and top with the remaining cheese, crispy bacon, green onions, and a dollop of sour cream or Greek yogurt.

Notes

For a lighter soup, use low-fat milk or Greek yogurt instead of heavy cream. Add in seasonal ingredients like roasted pumpkin in fall or fresh peas in spring for variety. Try adding cayenne pepper or smoked paprika for extra flavor.
