  • 1 large bag frozen tater tots Use a bag with approximately 28-32 oz.
  • 2-3 cups pork barbacoa (or any prepared pulled pork) Can substitute with chicken or beef.
  • 3-4 cups cheddar cheese Shredded for easy melting.
  • 1 package bacon, cooked and crumbled About 8 oz. package.

Toppings

  • to taste salsa For serving.
  • to taste diced olives For serving.
  • to taste sour cream For serving.

Instructions
 

Preparation

  • Preheat your oven to 375 degrees Fahrenheit.
  • In a large cast iron skillet, arrange the frozen tater tots to cover the bottom.

Assembly

  • Top the tater tots with your prepared pulled pork, making sure to distribute it evenly.
  • Sprinkle a generous amount of shredded cheddar cheese on top of the pork and then add the crumbled bacon.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the cheese is fully melted and bubbly.
  • Serve each portion topped with salsa, diced olives, and a large scoop of sour cream.

Notes

For extra crispiness, bake the tater tots for a few minutes before adding toppings. Can customize with different meats or add vegetables for more nutrition.
