  • 4 pieces lobster tails (6–8 ounces each) thawed if frozen; choose firm, fresh tails.
  • 4 tablespoons unsalted butter plus extra for serving; provides a classic indulgent taste.
  • 2 cloves garlic, minced adds warm, savory depth.
  • 1 tablespoon fresh lemon juice brightens and balances the richness.
  • 1 teaspoon smoked paprika adds color and gentle warmth (can substitute with sweet paprika).
  • 2 tablespoons fresh parsley, chopped for a fresh finish.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) if broiling or baking. If grilling, heat the grill to medium-high. Pat lobster tails dry and set aside.
  • Using kitchen scissors, cut the top shell lengthwise down the center, stopping before the tail fin. Gently pry the shell open and lift the meat, resting it on top of the split shell.

Herb Butter

  • In a small saucepan or microwave-safe bowl, melt the butter. Stir in minced garlic, lemon juice, smoked paprika, salt, and pepper until fragrant.

Cooking

  • Generously brush the lobster meat with half the herb butter. Place tails on a baking sheet and bake for about 8–10 minutes, spooning additional butter over the meat once during cooking.
  • The lobster is done when opaque and the internal temperature reaches 140–145°F (60–63°C).

Finish and Serve

  • Sprinkle chopped parsley over the lobster tails and serve with remaining warm butter and lemon wedges.

Notes

For grilling, follow the same buttering steps and grill meat-side up for 6–8 minutes, basting with butter once, until opaque and slightly charred at the edges. Garlic lemon butter is classic, but you may try a spicy chili-garlic butter for a festive twist.
