Ingredients
  

Main Ingredients

  • 2 lbs beef chuck roast or substitute with brisket
  • 4 cups beef broth homemade or store-bought for a rich flavor
  • 3 large carrots, chopped or use parsnips for a twist
  • 2 medium potatoes, diced sweet potatoes work beautifully as well
  • 1 medium onion, diced leeks can be a nice variation
  • 3 cloves garlic, minced shallots can be a delightful swap
  • 1 tablespoon tomato paste for a hint of acidity and richness
  • 1 teaspoon dried thyme fresh thyme can elevate the dish
  • Salt and pepper to taste essential seasonings

Instructions
 

Preparation

  • In a large pot, heat a tablespoon of oil over medium-high heat.
  • Season the beef with salt and pepper, then sear it on all sides until golden brown, about 6-8 minutes.
  • Remove the beef and set it aside.
  • In the same pot, add the diced onions and garlic, sautéing until the onions are translucent—about 3-4 minutes.
  • Add the tomato paste and stir, scraping any browned bits from the bottom of the pot.

Cooking

  • Return the beef to the pot along with the beef broth, carrots, potatoes, and thyme.
  • Bring everything to a gentle boil.
  • Once boiling, reduce the heat to low, cover, and simmer for 5 hours.
  • After 5 hours, taste and adjust seasonings as needed.

Serving

  • Serve hot with crusty bread and enjoy!

Notes

This stew can be customized with additional veggies or herbs. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
