  • 1 large Ripe Mango The star of the show!
  • 2 tablespoons Soy Sauce Provides necessary umami flavor.
  • 1 tablespoon Honey Complements the mango beautifully.
  • 2 cloves Garlic, minced Adds aromatic flavor.
  • 1 teaspoon Ground Ginger Adds a warm, spicy note.
  • 1 tablespoon Olive Oil For cooking and glaze.
  • Salt & Pepper To taste.

Preparation

  • Preheat your oven to 400°F (200°C) while you prepare the glaze.
  • In a blender, combine the mango, soy sauce, honey, minced garlic, and ground ginger. Blend until smooth and set aside.
  • Season the chicken breasts with salt and pepper, then coat them lightly with olive oil.
  • Slice each chicken breast into strips, then twist them into spirals.

Cooking

  • Place the twisted chicken onto a baking sheet and generously brush with the mango glaze.
  • Bake for about 20 minutes or until the chicken is cooked through and golden brown.
  • Halfway through, baste the chicken with any remaining glaze.

Notes

These delightful twists are perfect for leftovers! Store in an airtight container in the fridge for up to three days. For make-ahead, prepare and freeze before baking.
