  • 1 tablespoon paprika Adjust to taste
  • 1 teaspoon chili powder Adjust to taste
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons nutritional yeast For a cheesy flavor without dairy
  • 1/4 cup fresh herbs (cilantro or parsley) For garnish

Instructions
 

Cooking

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  • Add the diced onion, cooking until translucent, about 4-5 minutes.
  • Stir in minced garlic, cooking for another minute until fragrant.
  • Add canned tomatoes (with juices), chickpeas, and vegetable broth, stirring well to combine.
  • Season with cumin, paprika, chili powder, salt, and pepper. Simmer for about 10 minutes.
  • If using, sprinkle in nutritional yeast during the last 2 minutes of cooking, stirring well.
  • Serve hot, garnished with fresh herbs.

Notes

For a spicy kick, add red pepper flakes or hot sauce. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
