For the Casserole

  • 2 cups Pancake Mix Use your favorite brand or a homemade mix.
  • 1/2 cup Syrup Maple syrup is recommended.
  • 1 lb Breakfast Sausage Crumble and cook; turkey or plant-based alternatives work as well.
  • 4 large Eggs For binding the casserole.
  • 1 cup Milk Dairy or non-dairy is acceptable.
  • 1 cup Cheese Shredded cheddar or American cheese is ideal.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the sausage in a skillet over medium heat until golden brown and fully cooked.
  • In a large bowl, prepare the pancake mix according to package instructions, stirring in the eggs and milk until smooth.
  • Gently mix in half of the syrup into the batter.
  • In a greased baking dish, pour half of the pancake batter as the base, then layer the cooked sausage and sprinkle with cheese.
  • Pour the remaining pancake batter on top and drizzle with the rest of the syrup.
  • Bake in the preheated oven for 30 minutes until fluffy and golden brown.
  • Let the casserole sit for a few minutes before cutting into squares to serve.

Notes

Add chocolate chips, blueberries, or cinnamon for extra flavor. For a healthier option, use whole wheat or gluten-free pancake mix.
