Preparation

  • Sprinkle salt, pepper, and half the oregano over the chicken strips. Let them sit while you prep the vegetables.
  • Warm 1 tablespoon of olive oil over medium-high heat until it shimmers. Add the chicken in a single layer and sear for 3 to 4 minutes per side until golden and just cooked through. Transfer chicken to a plate.
  • Add the remaining tablespoon of oil, then the red onion and bell peppers. Cook for 4 to 5 minutes until softened and slightly charred at the edges. Stir in garlic for the last 30 seconds until fragrant.
  • Toss in cherry tomatoes, cooked chicken, and lemon juice. Sprinkle the remaining oregano, adjust salt and pepper, and let everything meld for 2 minutes.
  • Add spinach and stir until just wilted, about 1 minute. Turn off the heat and crumble feta on top if using.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently in a skillet to keep vegetables crisp. Variations can include adding red pepper flakes for spice or replacing chicken with tofu or chickpeas for a vegetarian option.
