Ingredients
  

For the chicken marinade

  • 1 pound boneless, skinless chicken breasts Can substitute with tofu or chickpeas for a vegetarian option.
  • 2 tablespoons olive oil Avocado oil can be used for a different flavor.
  • 2 cloves garlic, minced Fresh garlic enhances the taste; powdered garlic can work in a pinch.
  • 2 tablespoons fresh lemon juice Bottled lemon juice can substitute.
  • 1 teaspoon dried oregano Thyme or basil can also be used.
  • Salt & Pepper To taste.

For the wrap assembly

  • 4 large wraps/tortillas Whole grain or gluten-free options are great picks.
  • Fresh vegetables: lettuce, sliced cucumbers, diced tomatoes, shredded carrots Use whatever vegetables you prefer.
  • ½ cup feta cheese, crumbled Omit for a dairy-free option or swap for dairy-free cheese.
  • ½ cup tzatziki sauce Use homemade or store-bought.

Instructions
 

Marinating the Chicken

  • In a bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper.
  • Add the chicken breasts, ensuring they are well-coated. Let them marinate for at least 10 minutes, or up to 2 hours in the fridge for more flavor.

Cooking the Chicken

  • Heat a grill pan or skillet over medium heat.
  • Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden.
  • Let the chicken rest for a few minutes before slicing it into thin strips.

Assembling the Wrap

  • Lay out the tortillas on a clean surface.
  • Layer the lettuce, sliced cucumbers, diced tomatoes, shredded carrots, and diced chicken on each wrap.
  • Crumble feta cheese over the top and drizzle with tzatziki sauce.
  • Roll the wraps tightly, tucking in the sides as you go. Slice in half to serve.

Notes
