Pasta and Base Ingredients

  • 8 oz Pasta (rotini or penne) You can swap for whole wheat or gluten-free pasta if desired.
  • 1 cup Cherry Tomatoes Halved for juiciness. Substitute with diced bell peppers for added crunch.
  • 1 cup Cucumbers Chopped and refreshing. Pickled cucumbers can be used for a tangy twist.
  • 1/2 small Red Onion Finely diced. Leeks can be substituted for a milder flavor.

Flavor Enhancers

  • 1/2 cup Black Olives Pitted and sliced. Kalamata olives add a richer taste.
  • 1/2 cup Feta Cheese Crumbled. Tofu can be used as a dairy-free alternative.
  • 1/4 cup Olive Oil Extra virgin is recommended. Avocado oil is a tasty substitute.
  • 2 tbsp Red Wine Vinegar Brings acidity; lemon juice can be used as a fresh alternative.
  • 1 tsp Dried Oregano Herbs de Provence can also enhance the flavors.

Instructions
 

Preparation

  • In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside to cool slightly.
  • Chop the cucumbers, halve the cherry tomatoes, and finely dice the red onion while the pasta cooks.

Mixing

  • In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano until well combined.
  • In a large mixing bowl, combine the cooled pasta, chopped vegetables, black olives, and crumbled feta cheese.

Finishing Touches

  • Pour the dressing over the salad mixture and toss gently to combine. Ensure everything is well-coated with the dressing!
  • Taste and adjust seasoning with salt, pepper, or extra oregano as desired.
  • Let the salad chill in the refrigerator for at least 30 minutes for the flavors to meld. Serve chilled or at room temperature.
