Ingredients
  

Main Ingredients

  • 2 pounds chuck roast (or a similar cut; it’s tender and flavorful)
  • 2 tablespoons olive oil (feel free to use coconut oil or ghee for a different flavor)
  • 1 large onion, diced (the base of our aromatic journey)
  • 3 cloves garlic, minced (for a fragrant kick)
  • 1 teaspoon ground cumin (warming and earthy)
  • 1 teaspoon ground cinnamon (sweet and comforting)
  • 1/2 teaspoon ground coriander (adds a hint of citrus)
  • 1/4 teaspoon saffron threads (for a luxurious touch; you can substitute it with turmeric if needed)
  • 2 cups beef broth (homemade is best, but store-bought works too)
  • 1 tablespoon tomato paste (for depth of flavor)
  • Salt and pepper, to taste
  • 2 cups long-grain rice (or your choice of grain)
  • Fresh herbs (like cilantro or parsley, for garnish)

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the hot oil for about 4-5 minutes on each side until it’s golden brown.
  • Remove the beef and set it aside. In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Add minced garlic, cumin, cinnamon, coriander, and saffron, stirring until the spices bloom, about 2 minutes.

Cooking

  • Incorporate the beef broth and tomato paste, scraping up any tasty bits stuck to the bottom of the pot. Return the beef to the pot, making sure it’s partially submerged in the broth. Bring to a boil, then reduce to a gentle simmer.
  • Cover the pot and let it braise for about 2 hours, or until the beef is tender and falls apart easily with a fork.
  • About 20 minutes before serving, cook the rice according to package instructions, adding salt for flavor.
  • Fluff the rice with a fork, place a scoop onto a plate, top it with chunks of succulent beef and plenty of sauce. Garnish with fresh herbs for a pop of color.

Notes

Feel free to customize the dish with vegetables or different proteins. This recipe can be prepared in advance and tastes even better the next day.
