Preparation

  • Begin by thinly slicing the green and red cabbage. The more uniform the slices, the better the texture and presentation will be.
  • Use a box grater or food processor to grate the carrots, releasing their natural sweetness.
  • Finely chop the parsley and mint.
  • Thinly slice half the red onion.

Assembly

  • In a large bowl, mix together the shredded cabbages, grated carrots, chopped herbs, and sliced onions gently.
