Preparation

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  • In another bowl, mix the grated carrots, grated apple, crushed pineapple, eggs, vegetable oil, and vanilla extract until fully blended.
  • Pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing; the muffins should be slightly lumpy.
  • Fold in the nuts and any optional add-ins like raisins or coconut.
  • Spoon the batter into the muffin tin, filling each cup about 3/4 full.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean.
  • Cool the muffins in the tin for 5 minutes before transferring them to a wire rack to cool completely.
