Ingredients
  

For the Cookies

  • 1 cup Old-Fashioned Oats Adds chewy texture.
  • 1 cup Brown Sugar For richness and sweetness.
  • 1 cup All-Purpose Flour Base of the cookies.
  • 1/2 cup Butter, softened Brings richness.
  • 2 large Eggs For binding.
  • 1 teaspoon Vanilla Extract Adds warmth.

For the Filling

  • 8 oz Cream Cheese, softened For a creamy filling.
  • 2 cups Powdered Sugar Sweetens the filling.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine oats, flour, baking soda, and salt. Set aside.
  • In another bowl, beat together the softened butter and brown sugar until light and fluffy.
  • Mix in the eggs and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  • Drop rounded tablespoons of dough onto a lined baking sheet and bake for 10-12 minutes.

Filling and Assembly

  • While the cookies cool, beat the cream cheese with powdered sugar until smooth.
  • Spread a generous dollop of filling between two cookies to create a sandwich.

Notes

Store leftovers in an airtight container for up to a week. Freeze cookies without filling for up to three months.
