Wet Ingredients

  • 1 large Egg Be sure it’s room temperature for better mixing.
  • 2 tbsp Melted butter Substitution: Coconut oil or vegetable oil for a dairy-free version.

Preparation

  • In a spacious bowl, whisk together the flour, baking powder, sugar, and salt.
  • In another bowl, whisk together the milk, egg, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients, stirring gently until just combined.

Cooking

  • Heat a non-stick skillet or griddle over medium heat. A drop of water should sizzle when the pan is ready!
  • Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
  • Stack them high on a plate, add your favorite toppings, and pour warm syrup all over.

Notes

Pancakes are best enjoyed fresh, but store any cooled pancakes in an airtight container in the fridge for up to three days or freeze for up to one month. To reheat, simply pop them in the toaster or microwave until warm.
