  • 4 pieces bone-in, skin-on chicken thighs You can substitute with chicken breasts or bone-in pork chops.
  • 1 tablespoon olive oil
  • 1 cup chicken broth Homemade broth adds extra flavor.
  • 1 packet gravy mix Homemade gravy can also be used.
  • 4 cloves garlic, minced
  • 1 piece onion, sliced
  • 2 cups fresh mushrooms, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken, skin side down, and sear until golden brown (about 5-7 minutes).
  • Flip the chicken over and add the sliced onions, mushrooms, and minced garlic around it. Cook for 3-4 minutes until slightly softened.

Cooking

  • In a bowl, whisk together the chicken broth and gravy mix until well combined. Pour this over the chicken and vegetables.
  • Sprinkle thyme, salt, and pepper over the dish, cover the skillet, and transfer to the oven. Bake for 30 minutes.
  • Uncover and bake for an additional 15 minutes, allowing the gravy to thicken and the chicken fully cook.

Notes

For a healthier version, use skinless chicken breasts and low-sodium broth. Serve with mashed potatoes or rice to soak up the gravy.
