Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add chopped onions and bell peppers, stirring until they soften and become fragrant.
  • Push the veggies to the side and add the chicken thighs. Sear until browned, about 5 minutes on each side.
  • Stir in minced garlic and rinse the long-grain rice, mixing it with the chicken and vegetables.
  • Pour in the honey BBQ sauce and chicken broth, ensuring everything is well combined.
  • Cover the skillet and let it simmer on low heat for about 25 minutes, or until the rice is cooked and has absorbed all the lovely flavors.
  • Fluff the rice with a fork and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of broth for moisture. Can be made ahead of time for easy meal prep.
