Ingredients
  

Pasta Base

  • 8 ounces orzo pasta A wonderful alternative to traditional pasta, it adds a lovely texture.

Shrimp

  • 1 pound large shrimp, peeled and deveined Fresh shrimp are ideal, but frozen works too.

Aromatics and Flavoring

  • 2 tablespoons olive oil For the base flavor, use extra-virgin for a richer taste.
  • 4 cloves garlic, minced Always use fresh for the best aroma.
  • 1/2 cup white wine Choose a dry wine or vegetable broth as a substitute for a non-alcoholic option.
  • 1 cup chicken or vegetable broth Homemade is best if you have it!
  • 1 juice of 1 lemon Fresh lemon juice brightens the entire dish.
  • 1/4 cup freshly chopped parsley Adds color and flavor; basil can be used for a twist.
  • 1/4 teaspoon red pepper flakes Adjust to your spice preference.
  • Salt and pepper Essential to round out all flavors.

Preparation

  • In a large skillet over medium heat, drizzle the olive oil. Let it warm; it's ready when a ripple forms.
  • Add the shrimp to the pan, seasoning with salt and pepper. Sauté for about 2-3 minutes until they just turn pink.
  • Toss in the minced garlic, stirring for another minute until everything is aromatic.
  • Pour in the white wine, scraping any bits off the bottom of the pan. Let it simmer for 2-3 minutes until slightly reduced.
  • Add the chicken or vegetable broth and orzo, stirring to combine. Bring to a gentle boil, then reduce to low heat. Cover and let it cook for 10-12 minutes, or until the orzo is tender.
  • Once the orzo is cooked, drizzle in the lemon juice and add the chopped parsley and red pepper flakes. Stir gently and let the flavors marry for a minute or two.
  • Plate your One-Pan Shrimp Scampi and Orzo, garnishing with additional parsley if desired.

Notes

Add chopped spinach or cherry tomatoes during the final stirring for extra nutrition. For a creamier texture, stir in a dollop of cream or Greek yogurt at the end. Try substituting shrimp with chicken or scallops for a different flavor.
