  • 2 cloves garlic, minced for that fragrant, bold flavor
  • 1 inch piece of ginger, grated a zesty kick of warmth
  • 1 can coconut milk creates a luscious sauce
  • 2 cups vegetable broth or beef broth for deeper flavor
  • 1 tablespoon curry powder feel free to adjust for spice preference
  • 1 teaspoon cumin for an earthy undertone
  • Salt and pepper to taste
  • Fresh cilantro for garnish brings a pop of freshness

Preparation

  • In a large pot, brown the ground beef over medium heat until fully cooked, breaking it up with a wooden spoon.
  • Add the diced onion, garlic, and ginger. Stir until the onion is translucent, about 5 minutes.
  • Sprinkle in the curry powder, cumin, salt, and pepper. Let the spices bloom for about a minute.
  • Stir in the cubed sweet potatoes and chickpeas, mixing everything well to coat with the spices.
  • Add the coconut milk and vegetable broth to the pot. Bring to a gentle simmer and allow cooking for about 20 minutes.
  • Taste and adjust seasoning as necessary.
  • Serve warm, garnished with fresh cilantro.

Notes

Leftovers can be refrigerated for up to 3-4 days or frozen for later use. Toasting spices prior to adding enhances flavor.
