Ingredients

Main Ingredients

  • 1 pound Ground Beef Swap with ground turkey or chicken for a leaner option.
  • 2 cups Pasta (Elbow macaroni or penne) Use whole grain or gluten-free varieties if desired.
  • 1 packet Taco Seasoning Essential for authentic taco flavor.
  • 1 can Diced Tomatoes Crushed tomatoes can also work well.
  • 2 cups Chicken Broth Choose low-sodium for a healthier alternative.
  • 1 can Beans (black or pinto) A great source of protein and fiber.
  • 1 cup Cheese (shredded cheddar or Mexican blend) Feel free to use dairy-free cheese if you prefer.
  • 1 cup Corn (optional) Fresh or canned; adds sweetness and crunch.

Instructions

Cooking Steps

  • In a large pot over medium heat, brown the ground beef until fully cooked, breaking it apart with a spatula.
  • Stir in the taco seasoning, letting it mingle with the beef for a minute until fragrant.
  • Add the pasta, diced tomatoes, and chicken broth to the pot. Bring everything to a boil, then reduce the heat to a simmer.
  • Cook until the pasta is tender, around 10-12 minutes, stirring occasionally to prevent sticking.
  • Once the pasta is cooked, fold in the beans and cheese, allowing it to melt and become creamy.
  • Taste and adjust with salt or extra seasoning as desired.
  • Dish out the pasta into bowls and top with your favorite fresh toppings like avocado, sour cream, or cilantro.

Notes

For variations, add diced jalapeƱos for spice, or toss in bell peppers or spinach for extra nutrients. You can use lentils or jackfruit for a vegan option.
