  • 8 oz Fettuccine or penne pasta Preferred pasta for soaking up sauce.
  • 1 lb Chicken breast, diced Can substitute with shrimp or plant-based options.
  • 1 cup Heavy cream Use half and half or milk for a lighter version.
  • 1 cup Parmesan cheese, freshly grated Nutritional yeast can be used for a dairy-free option.
  • 2 cloves Garlic, minced Infuses flavor into the dish.
  • 2 cups Chicken broth Low-sodium is a good alternative.
  • 2 tbsp Butter Can substitute with olive oil for a healthier choice.
  • to taste Salt Essential for seasoning.
  • to taste Pepper Essential for seasoning.

Preparation

  • In a large pot over medium heat, melt 1 tablespoon of butter. Add the diced chicken, season with salt and pepper, and cook until golden and fully cooked (about 5-7 minutes). Remove the chicken and set aside.
  • In the same pot, add another tablespoon of butter and the minced garlic. Sauté for about 30 seconds until fragrant.

Cooking

  • Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  • Stir in the uncooked pasta, ensuring it’s submerged in the liquid. Cover and cook for about 10-12 minutes, stirring occasionally until the pasta is tender.
  • Once the pasta is cooked, stir in the cooked chicken and grated Parmesan cheese. Mix until everything is creamy and well combined. Taste, and adjust seasoning if needed. Serve hot, garnished with parsley or additional cheese if desired.

Notes

For added nutrition, toss in spinach or broccoli. Fresh basil or thyme can elevate the flavors. Add red pepper flakes for a spicy kick.
