  • 2 cups Fresh Spinach Can substitute with kale or frozen spinach.
  • 4 tbsp Unsalted Butter For a rich and creamy sauce.
  • 2 cloves Garlic Fresh cloves, minced.
  • 1 cup Heavy Cream Alternatives include coconut milk or cashew cream.
  • 1/2 cup Parmesan Cheese Freshly grated; nutritional yeast can be used for dairy-free.

  • In a large pot, cook your pasta according to package instructions. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
  • In the same pot, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Toss in the fresh spinach and sauté until wilted, which will take about 2-3 minutes.
  • Pour in the heavy cream, stirring well to combine. Gradually add the reserved pasta water to reach your desired creaminess and bring to a gentle simmer.
  • Add the drained pasta to the pot, mixing everything gently until coated in the creamy garlic butter sauce. Stir in grated Parmesan cheese, salt, and pepper.
  • Garnish with additional cheese and serve immediately.

Notes

Feel free to add protein like chicken or shrimp, incorporate other veggies, or spice it up with red pepper flakes. Store leftovers in an airtight container for up to 3 days, reheating with a splash of cream or pasta water.
