  • 12 ounces pasta (fettuccine, spaghetti, or penne) Choose your favorite type of pasta.
  • 6 cloves garlic (minced) Fresh cloves are best for authentic flavor.
  • 4 tablespoons unsalted butter Allows control over the saltiness.
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian variant.
  • 1 cup heavy cream Can be substituted with half-and-half.
  • 1-2 cups Parmesan cheese (grated) Freshly grated gives the best flavor.

  • to taste fresh parsley (chopped) For garnish.

Preparation

  • In a large pot, melt 4 tablespoons of butter over medium heat. Add 6 minced garlic cloves, cooking until they turn golden and fragrant—about 2 minutes.
  • Stir in 12 ounces of your chosen pasta, ensuring it’s well coated in the buttery garlic.
  • Add 4 cups of chicken broth and a pinch of salt. Bring it to a gentle boil, then reduce the heat to a simmer.
  • Cover the pot and cook for 10-12 minutes, stirring occasionally until the pasta is al dente and has absorbed most of the liquid.
  • Stir in 1 cup of heavy cream and 1-2 cups of grated Parmesan cheese. Mix until smooth.
  • Taste for seasoning, adding salt and pepper as needed. Finish with chopped parsley for a pop of color and fresh flavor.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove, adding a splash of broth or cream. For long-term storage, freeze in portions for up to 2 months.
