  • 8 oz pasta (spaghetti or fettuccine, gluten-free if preferred)

Preparation

  • In a large pot over medium heat, combine olive oil and minced garlic. Allow the garlic to soften for about 1-2 minutes until it's fragrant and golden.
  • Pour in the uncooked pasta, followed by the chicken or vegetable broth. Stir gently for a few seconds, coating the pasta in that lovely garlic oil.
  • Next, add in the heavy cream, a pinch of salt, and fresh ground pepper. Stir everything together, ensuring the pasta is submerged in the creamy goodness.
  • Cover the pot and bring to a gentle simmer. Cook for about 10-12 minutes, stirring occasionally until the pasta is al dente and the sauce has thickened to a silky consistency.
  • Remove from heat, and stir in the grated Parmesan cheese until melted. Adjust seasoning if needed, and toss in a handful of freshly chopped parsley for a pop of color.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in portions. Reheat gently on the stove over low heat with a splash of broth or cream.
