  • 1 Medium Onion, Chopped Adds a sweet and aromatic base to your dish.
  • 3-4 Cloves Garlic, Minced Garlic elevates everything and adds aroma.
  • 2 cups Marinara Sauce Use your favorite store-bought or homemade.
  • 4 cups Chicken or Vegetable Broth Adds depth and richness.
  • 2 cups Ricotta Cheese Creamy goodness; can substitute with cottage cheese.
  • 2 cups Shredded Mozzarella Cheese Use part-skim for a healthier option.
  • 1 tsp Dried Italian Herbs (Oregano & Basil) For iconic Italian flavors.

Instructions
 

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Once hot, add the chopped onion and sauté until translucent, about 2-3 minutes.
  • Add in the minced garlic, cooking until fragrant, about 1 minute.

Cooking

  • Add the ground beef or Italian sausage to the pot and cook until browned, breaking it up with a wooden spoon.
  • Season with salt, pepper, and dried herbs.
  • Stir in the marinara sauce and broth, then bring to a gentle simmer.
  • Add the broken lasagna noodles, gently pushing them down into the liquid.
  • Cover the pot and let it simmer for about 15 minutes, stirring occasionally.
  • Once the noodles are tender, remove the pot from heat and stir in the ricotta cheese until creamy and well distributed.
  • Top with shredded mozzarella, cover, and let sit for 5 minutes until the cheese is melted.

Serving

  • Garnish with fresh basil or parsley if you have it and serve.

Notes

This recipe is versatile. For a vegetarian option, skip the meat and add spinach and mushrooms. Add crushed red pepper flakes for heat, or alternate layers of cheese for extra creaminess.
