Preparation

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  • Toss in the minced garlic and cook for another minute, stirring constantly to prevent burning.
  • Add the shrimp to the pot, cooking until they turn pink, about 2-3 minutes per side.
  • Stir in the cherry tomatoes and pour in the chicken broth.
  • Bring the mixture to a boil, then add the orzo pasta, stirring to combine. Lower the heat and let it simmer until the pasta is tender and has absorbed most of the liquid, about 10 minutes.
  • Finish with a squeeze of fresh lemon juice and a generous sprinkle of parsley.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. You can reheat it in a pan over low heat, adding a splash of chicken broth to revive moisture. Chopping veggies and cleaning shrimp in advance can save time.
