  • 2 fillets Salmon fillets (skin-on for extra flavor)
  • 2 tbsp Butter (try using grass-fed for a richer taste)
  • 1 unit Zest of 1 Lemon Adds brightness
  • 1 unit Zest of 1 Orange For a sweet, fragrant depth
  • 1 unit Juice of 1 Lemon Fresh is best!
  • 1 unit Juice of 1 Orange Substitute with tangerine if you prefer
  • Salt and pepper To taste
  • Fresh parsley For garnish, optional but delightful

Preparation

  • Start by patting the salmon fillets dry with paper towels. Season generously with salt and pepper on both sides.

Cooking

  • In a large skillet, heat a tablespoon of butter over medium-high heat until melted and bubbly.
  • Place the salmon fillets skin-side down in the skillet. Let them sear for about 5 minutes until the skin is crispy and golden.
  • Gently flip the fillets using a spatula. Add the remaining tablespoon of butter, the lemon and orange zest, and the citrus juices to the pan.
  • As the butter melts and bubbles, use a spoon to baste the salmon with the citrus butter glaze. Cook for an additional 2-3 minutes, depending on your desired doneness.
  • Once cooked through, remove from heat and garnish with freshly chopped parsley before serving.

Notes

For variations, add red pepper flakes for spice or swap fresh herbs. Best enjoyed fresh but can be stored in the refrigerator for up to 2 days. To reheat, gently warm in a skillet over low heat.
