Wet Ingredients

  • 1/2 cup unsalted butter, melted Use coconut oil for a dairy-free alternative.
  • 1 cup milk Whole or almond milk can work here.
  • 2 large eggs Flax eggs are a good vegan alternative.

Main Ingredients

  • 2 cups fresh peaches, chopped The star of the dish! Frozen peaches can be used if fresh are not available.

Optional Topping

  • 1/2 cup crumbled topping (brown sugar, oats, and butter mix) For that classic cobbler crunch.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix the flour, sugar, baking powder, salt, and cinnamon.
  • In another bowl, whisk together the melted butter, milk, and eggs until well combined.
  • Pour the wet ingredients into the dry mixture, stirring just until combined.
  • Gently fold in the chopped peaches.
  • If using, prepare the topping by mixing the ingredients until crumbly.
  • Spoon the muffin batter into a greased or lined muffin tin, filling each cup about 2/3 full.
  • Sprinkle the topping on each muffin if you're adding it.

Baking

  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Allow to cool slightly before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days. Muffins freeze beautifully — flash freeze then store in a freezer bag. Reheat in the oven to maintain texture.
