Ingredients

Main Ingredients

  • 1 lb boneless, skinless chicken breasts Cut into bite-sized pieces for quick cooking.
  • 1 cup fresh pineapple chunks Adds sweetness and a tropical flair; you can substitute with canned pineapple if fresh isn't available.
  • 2 cups mixed bell peppers Sliced to give color and crunch; feel free to use any variety you prefer.
  • 1 cup broccoli florets For an added nutritional boost; substituted with snow peas or snap peas if desired.
  • 3 cloves garlic Minced; provides aromatic depth.
  • 2 tablespoons soy sauce Low-sodium options are available for a healthier alternative.
  • 1 tablespoon cornstarch To thicken the sauce; arrowroot powder works as a gluten-free substitute.
  • 2 tablespoons vegetable oil For stir-frying; olive oil is also a great alternative.
  • Salt and pepper To taste; simple seasonings that enhance the dish.

Instructions

Preparation

  • Start by chopping the chicken, vegetables, and pineapple. Having everything ready means a smoother cooking experience.
  • In a bowl, combine the chicken pieces with soy sauce and cornstarch. Let it sit for about 5 minutes while the flavors meld together.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  • Add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  • Toss in the minced garlic, bell peppers, and broccoli. Stir-fry for another 3-4 minutes until the veggies are tender yet crisp.
  • Finally, add the fresh pineapple chunks. Stir everything together and cook for an additional 2 minutes just until heated through.
  • Give it a taste, then season with salt and pepper as needed. Serve warm over rice or noodles.

Notes

If you're in the mood for something different, replace the chicken with shrimp or tofu for a vegetarian twist. Try adding a sprinkle of sesame seeds or sliced green onions on top for added crunch and flavor. For those who enjoy heat, a few red pepper flakes or a drizzle of sriracha can elevate this dish to new heights.
