Preparation

  • Preheat your oven to 400°F (200°C).
  • Crush the potato chips into small pieces and set aside in a bowl.
  • Season the flour with salt, pepper, and optional spices. Dredge each chicken breast in the flour, shaking off any excess.
  • In a separate bowl, whisk the eggs. Dip each floured chicken breast into the egg wash, allowing any excess to drip off.
  • Coat the chicken in the crushed potato chips, pressing firmly to ensure they adhere well.

Cooking

  • Place the chicken on a greased baking sheet and bake for 20-25 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for a few minutes before serving.
